Blackberry Financiers

In 2014 I stepped off the airplane in Paris for my birthday. Right as I opened the door, my Mom greeted me with song and three of my favorite French pastries - financiers! There were three flavors including the classic almond, chocolate, and classic with raspberries. I still have memories of that day - photo below.

These little almond cakes were a favorite of the French banker set, so their name and style is firmly rooted in the banking world. Financiers are typically baked in a special pan that makes each cake resemble a gold bar. I baked this batch in two muffin pans to resemble my birthday financiers.

Financiers are easy to make and they’re the perfect snack. Take advantage of the last weeks of summer berries with this simple recipe!

INGREDIENTS:

Yields approximately 24 financiers

  • 1/2 cup plus 5 tablespoons unsalted butter

  • 1 cup blanched almond flour

  • 1/2 cup all-purpose flour

  • 1 1/2 cups plus 2 tablespoons powdered sugar

  • 5 large egg whites

  • 1 teaspoon vanilla extract

  • 2 tablespoons honey

  • Melted butter, for brushing

  • 2 cups fresh blackberries, halved

DIRECTIONS:

  1. Preheat oven to 375 degrees.

  2. Make browned butter: Melt butter in saucepan over medium heat, stirring frequently. Simmer butter until all milk solids disappear and butter become fragrant and dark brown. Remove from heat and cool completely.

  3. In a large bowl, combine almond flour, all-purpose flour, powdered sugar. Whisk to combine.

  4. Add egg whites and vanilla extract and mix until smooth. Gently fold in honey.

  5. Brush two muffin tins with melted butter. Add 1 generous tablespoon of batter to each muffin and top with 3 blackberry halves.

  6. Bake for 15 minutes, rotating halfway through. Edges will be golden brown. Cool in pans for 10 minutes. Remove pans from tins.

  7. Serve immediately or at room temperature. Great with a dusting of powdered sugar!
