Welcome to KATIE’S Midnight bakery!

On my 29th birthday, I set a goal: Learn to bake from scratch before I turn 30. What started as an experiment to make the BEST chocolate chip cookies turned into a journey of reconnecting with my family history.

I come from a family of skilled bakers - both professionals and self-taught. My maternal great-grandparents owned and operated the Plainfield Bakery in Plainfield, NJ.

Food is important. It is the touchstone for our memories of holidays, family, and friends.

Growing up here in Texas, I had a front row seat watching my mom, my dad, and my paternal great-grandmother and aunt make incredible meals, desserts, and bread.

All of my favorite memories involve food and the people who spent time making those dishes - from my mom making intricately decorated Fabergé egg-inspired Easter cakes to my great-grandmother dunking Parker House rolls in butter.

For me, baking and cooking is a way to remember those moments - and create new memories, too.

So why call it Midnight Bakery? When I first started baking bread, I’d start the whole process after work, which meant the bread always came out of the oven past midnight. One night, my husband, Dan, walked in the kitchen and asked me “are you running a midnight bakery in here?” The name stuck. There is something pretty magical about fresh bread and softened butter as a midnight snack though…
