University of Texas Special Bake-Along! Pumpkin Spice Bars with Cinnamon Cream Cheese Frosting

PUMPKIN SPICE BAR INGREDIENTS:

  • 1 cup firmly packed light brown sugar

  • 1/3 cup granulated sugar

  • 3/4 cup unsalted butter, melted

  • 1 1/2 cups canned pumpkin

  • 3 large eggs, at room temperature

  • 2 teaspoons vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 3/4 teaspoon baking soda

  • 3/4 teaspoon kosher salt (I use Diamond Crystal)

  • 1 1/2 teaspoon ground cinnamon

  • 1 teaspoon ground ginger

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon ground allspice

CINNAMON CREAM CHEESE FROSTING

  • 8 ounces (1 package) cream cheese, softened

  • 1/2 cup unsalted butter, softened

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon kosher salt

  • 1 pound confectioners’ sugar
